I am on a roll!! Two posts in two days! Let’s see how long that’s gonna last for……

A few days ago I made a slightly different version of this chile recipe, and it was damn tasty! I very rarely follow a recipe from beginning to end. Don’t ever be shy to change a few things up and don’t be thrown if you you don’t have all the ingredients.

I didn’t have turkey, so I used minced beef and a beef stock instead (whichever meat you do choose, go organic if you can. Better for you, better our animals and mother earth. And if you’re not into meat, or just fancy a veggie version, chopped up some sweet potato and add an extra can of beans) I also skipped the apple butter as suggested and the chipotles. Instead I used some fresh chiles, as much or as little as you like depending on how hot you like it!

This recipe is actually for a slow cook but can also be done in 45 minutes. Serve it up with some rice or soft tortillas, avocado, fresh coriander and a dash of lime. Bon Appétite!
